Chicken and Biscuits Casserole

- 1 medium onion, chopped
- 1 1/2 teaspoons butter
- 4 cups Rotisserie chicken, chopped
- 1 small jar chopped pimiento
- 1 can cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 1 cup mild cheddar cheese, shredded
- 8 frozen biscuits
- Take the biscuits from the freezer and allow them to begin thawing while you prepare the rest of the ingredients.
- Spray 11 x 7 baking dish with cooking spray.
- Preheat the oven to 350 degrees.
- Heat butter in a skillet and saute onions until tender.
- Combine chicken, soup, sour cream, milk, pimento, and onions and spoon into the prepared baking dish.
- Bake for 15 minutes.
- Sprinkle the shredded cheese and top with the biscuits.
- Bake for about 20 minutes until bubbly and the biscuits are golden brown. Enjoy!
