Jalapeño-Cheddar Waffles
Ingredients- 2 large eggs
- 3 tablespoons vegetable oil
- 2 cups low-fat buttermilk
- ½ cup shredded cheddar cheese
- 1¾ cups all-purpose flour
- 1¼ cups yellow cornmeal
- 1 tablespoon baking powder
- ¼ teaspoon sugar
- 1 teaspoon salt
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- 1 jalapeño, minced
- Preheat waffle iron.
- In a large mixing bowl, whisk together flour, cornmeal, baking powder, sugar, salt, cumin, chili powder and garlic powder.
- Add jalapeño, buttermilk, vegetable oil, and eggs; mix well.
- Stir in cheddar cheese.
- Pour ½ cup of batter into your waffle maker and cook until golden brown; repeat until all batter has been used.
